Simone Camel, PhD, RDN earned an undergraduate degree in Nutrition from St. Mary’s Dominican College in New Orleans, a Master’s Degree from Texas Woman’s University in Houston, and a PhD in Nutrition and Food Systems from the University of Southern Mississippi. She is a Registered Dietitian with a 20-year history in clinical practice prior to moving into academics full-time. She has co-authored multiple peer-reviewed publications, and a book chapter. Dr. Camel has also received teaching awards. Her research interests are in the areas of Food and Nutrition Security, Food Systems and Culture, Global Nutrition, and Health Policy. Her community service includes working with community centers, food banks, and underserved populations. Dr. Camel has also been involved in international service learning projects. She has also served the profession in multiple leadership positions including those related to program accreditation.
