Pear Cobbler (serves 6)

Ingredients
Pastry
1 1/2 cups flour sifted
1/2 tsp salt
1/4 cup lard
1 egg
3 tbsp water

Filling
1/2 cup sugar
2 tbsp flour
1 tsp nutmeg
4 cups thinly sliced pears
3 tbsp butter

Sauce
1 pear
1 cup water
1/2 cup sugar
2 tsp cornstarch
1/4 tsp nutmeg
3 tbsp butter
Preparation
First make the pastry by sifting flour and salt, then cutting lard into the mixture. Beat egg and water slightly and stir into flour combination to form a soft ball of pastry. Set your oven at 350 degrees.

Roll out pastry to a 15"x12" rectangle. Mix sugar, nutmeg and flour for the filling and sprinkle 1/2 over pastry. Cover with pears, then sprinkle with the remainder of the sugar mixture. Dot with butter and roll pastry as you would for a jelly roll. Bake for 50 minutes. After 30 minutes are up, brush with some of the syrup that bakes out of the pudding.

Whilst the pudding bakes, make the sauce. Cube the pear and cook in water for 15 minutes. Combine sugar, nutmeg and cornstarch and stir into the cooked pears. Add butter and cook until sauce is clear and bubbly.
