General Sam Houston Folk Festival - April 20-22

This year the General Sam Houston Folk Festival will be Friday April 20 and Saturday April 21 from 9 am to 6 pm and on Sunday April 22 from 12 pm to 5 pm. It all started in 1988 when the Sam Houston Memorial Museum was being threatened with closing due to decreased funding from the state, and the East Texas Folk Festival was used as a fundraiser to keep the museum on its feet. The festival did the job and made enough money to keep the museum up and running until there were more funds available. Shortly after that, the name of the festival was changed to the General Sam Houston Folk Festival that we know. The festival has attracted around 15,000 visitors for three days and is expecting about 18,000 this year. It will include craft demonstrations, living-history re-enactment, ethnic foods and musical entertainment and much, much more! Volunteers from our community and SHSU are the main people that make it happen. The main purpose of the festival is the education of the youngsters, which is included in the Friday school session which invites 4th graders from all over our area. You will need:
A few tortillas
A can of refried beans
Salsa
Shredded Cheese
Spread the beans over the tortilla and top with salsa and shredded cheese. Heat until the cheese is melted. Enjoy with microwavable rice.
